The dough: 115g butter, 150g light brown sugar, 1 egg, dash vanilla essence, 190g T45 (pastry) flour, 1/2 tsp baking powder (levure chimique), 150g chopped up organic dark chocolate, 1/2 tsp fleur de sel and a little to sprinkle at the end after the cookies are baked
Chill for at least an hour.
Line a tray with baking paper, make about 12 balls, no need to squash them down, and bake for 12 minutes at 180 C.
Leave them to cool on the tray for 10 minutes before moving.
